Section 1 - Recipe booklet :
The recipe booklet is a tool that presents and explains the daily production plans and recipes for a cycle menu. It also includes various additional information of interest to camp food services. The 150 cycle menu recipes are available in an Excel file and can be adjusted to the number of servings required.
Section 2 - Food purchase guide :
The food purchase guide is designed to help food services identify the foods they need for their cycle menu and the suppliers they buy from. It contains purchasing policies and procedures, as well as food purchase specifications.
The shopping list allows you to compare estimated quantities against quantities actually purchased and used.
The cycle menu weekly cost worksheet helps you manage food-related costs for your camp.
Section 3 - Food Improvement Indicator :
The Food Improvement Indicator useful for assessing the impact of changes in the camp’s food purchases on its food offerings.
The Shape Up training designed by Institut de Tourisme et d’Hôtellerie du Québec (ITHQ) is aimed at summer camp cooks and managers seeking to improve their meal offerings.
- Part 1 - Training workshop
One-day theoretical and hands-on training developed by Institut de tourisme et d’hôtellerie du Québec (ITHQ) to improve summer camp menus and facilitate ownership of the tools developed.
The training given to food service managers and camp managers is held at a participating Shape Up camp.
- Part 2 - Coaching
One-day coaching provided by an ITHQ professor or consultant who goes to each camp to support the food service team in its efforts to change its practices and implement the Shape Up program.
